Healthy Veggie Lasagne

Alright, so maybe that melted cheese on top doesn’t look so healthy, but it is lower in calories than a traditional lasagne.

Ingredients:

  • 3 cups chopped veggies of your choice

  • 1/2 chopped onion

  • 2 tablespoons minced garlic

  • 1 tablespoon olive oil

  • 1 cup of quark 

  • 1 egg

  • 2 cups fresh spinach

  • 2 cups tomato sauce

  • 2 sliced and salted courgettes

  • 1 whole butternut squash sliced

  • 1 cup mozzarella cheese, shredded

Directions:

Chop the veggies. Saute the onion and garlic in the oil over medium-high heat

  1. Whisk the egg and quark.

  2. Pour a small amount of the squark and eggs sauce mix at the bottom of a greased baking dish. Top with sliced butternut squash and or courgette sliced (Make sure you salt the courgette to remove excess water and stop it from going mushy). Then add 1/2 cup of the quark and eggs mix, 1/2 of the veggies, and 3/4 cup of sauce. Repeat; and with the final layer finish with the courgette and butternut squash slices, remaining sauce, and mozzarella cheese.

  3. Cover with foil and bake in the oven for 35 minutes at 180 degrees. Then at the end remove the foil and bake for 10 minutes more or until the cheese is bubbly.
